Originally a French-Italian fusion bistro, Le Bistango quickly forged a reputation among its mostly Quebec City–based business clientele. Driven by new trends in international fine dining, the restaurant shifted toward a health smart, California-style cuisine between 1988 and 1990, setting its course for years to come. New and regular customers have been enjoying a bold and varied cuisine imbued with new culinary approaches ever since. This desire to change and innovate was the key to the eatery’s success throughout the 1990s.
 
Since undergoing renovations in 2006, Le Bistango now features a more contemporary decor where the warm and friendly atmosphere is backed by both the rhythms of jazz and well-known repertoire of French song. Day after day, chef Sylvain Lambert and his team work passionately to present dishes rich in color and flavor.
